Valle Rustico is located in Vale dos Vinhedos, in the city of Garibaldi (RS). It was created more than a decade ago, with the aim of being an eco-gastronomic space. Conceived and still led by chef Rodrigo Bellora, it works with a tasting menu, under the concept of Nature Cuisine.
Chef, farmer and researcher, Rodrigo Bellora is from Bento Gonçalves and is the creator of the Nature Kitchen concept, as a way of recreating and rethinking gastronomy.
Graduated in Tourism, has a specialization in Business Management and training in Gastronomy at Senac, Instituto Albierguero (Trento/Italy) and UCS – ICIF (Flores da Cunha/RS).
As a local leader of the Slow Food movement, the chef conducts his processes always seeking Good, Clean and Fair food.
Through his signature restaurants, Valle Rustico, Guaraipo Bar e Cozinha (Farroupilha/RS) and Tubuna - Cultura Gastronômica (Bento Gonçalves), he applies the concept of Nature Cuisine in signature menus and dishes, always taking advantage of what the land can give its best at every period of the year.
